Fiesta Quinoa Salad
Fiesta quinoa salad is one of our family’s favorite recipes. This fresh, delicious, healthy salad is filling enough for a main dish and can also be used as a side dish when entertaining. We love how versatile it is because we can serve it warm on cold days and serve it cold on warmer days. The taste is incredible and has always been well received by all we’ve prepared it for. Fiesta Quinoa Salad Recipe
Yields: 6 Servings
Total Time: 10 minutes
Ingredients:
3 cups cooked quinoa
1 cup diced cucumber
1 red bell pepper, diced
1 can corn, drained
1 can black beans, drained and rinsed well
¼ cup fresh cilantro, chopped
¼ cup olive oil
3 tablespoons fresh lime juice (can substitute lemon juice)
½ teaspoon sea salt (can add more to taste)
1 teaspoon cumin
½ teaspoon cayenne pepper
Directions:
Simply combine all ingredients in a large bowl and mix well to incorporate.
Notes:
Salad may be served warm or cold depending on preference.
For meal prep, simply portion the salad into food storage containers and refrigerate for up to 5 days.
