In our household we love making Keto Shrimp Pad Thai. It’s a simple dish you can whip up in no time flat. Plus it’s delicious and healthy, and you won’t have any troubles getting the kids to devour this veggie filled recipe.
Keto Pad Thai with Zucchini Noodles
Though its Keto friendly, our Pad Thai recipe will still satisfy all your noodle cravings!
This yummy meal can be made for dinner, or packed to take for your lunch. If you’re hosting a dinner party and would like some healthy entrees to make for your guests, this recipe is definitely for you.
In our recipe we replace the noodles with spiralized zucchini. We love making our own noodles from zuchinni, also known as “zoodles.” We also enjoy making our own noodles from squash and carrots.
To make our own zoodles at home, we use a spiralizer. With this spiralizer you can turn your favorite veggies into noodles in just a few seconds. It’s a must have kitchen tool!

Ingredients:
- 2 Zucchini, spiralized
- 1 Tbsp fish sauce
- 2 Tbsp coconut aminos (or soy sauce)
- 1 Tbsp erythritol
- 2 Tbsp lime juice
- 1 Tsp ginger powder
- 1 Tsp garlic powder
- 1/4 Tsp turmeric
- 1 Tbsp almond butter
- Salt and pepper to taste
- 3 Tbsp coconut oil
- 1/2 Pound shrimp
Directions:
Heat 1 Tbsp coconut oil in a large pan over medium heat.
Cook the zucchini for 1 minute and transfer to a plate.
Add the rest of the coconut oil to the same pan and cook the shrimp.
In a small bowl combine the fish sauce, aminos, erythritol, lime juice, ginger, garlic, turmeric and almond butter and stir to combine.
Pour over the shrimp and cook for 2 minutes.
Add the zucchini and toss to coat with the sauce.
