Vanishing Oatmeal Raisin Cookie
See when my husband was returning home from his first deployment I wanted to make all of his favorite foods and oatmeal raisin cookies was one of them and right at the top of the list. Since they turned out so good and he actually liked them, me and the children continued to make them whenever he was gone, during deployments, being in the field, overnight stays for meetings, and eventually just for coming home from work became a good enough reason. I think eventually though that we made them so much that my husband lost interest and it became my children favorite cookie. So now the name of these cookies brings the biggest smiles to their faces.
This is one of our favorite cookies recipes and I discovered under the top of the Quaker Oats Old Fashion oatmeal container.
Ingredients
½ cup (1stick) plus 6tbsp. butter, softened
¾ cup firmly packed brown sugar
½ cup granulated sugar
2 eggs
1 tsp vanilla
1½ cup all-purpose flour
1 tsp cinnamon
½ tsp salt (optional)
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup raisins
Directions
Heat oven to 350 F. In a large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
Add eggs and vanilla; beat well.
Add combined flour, baking soda, cinnamon and salt; mix well.
Add oats and raisins; mix well.
Drop dough by rounded tablespoonfuls on to ungreased cookie sheets.
Bake 8-10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered. Makes about 4 dozen cookies.
