Homemade Vanilla Biscotti Recipe

We have two words for you: Vanilla Biscotti. We don’t know about you, but we are both very fond of vanilla and biscotti so the two make for a very natural fit in our book. Today we are sharing our family recipe for homemade vanilla biscotti. Add one of your favorite teas or one of your favorite coffee blends and you are in for a real treat!

Homemade Vanilla Biscotti Recipe

Ingredients:

In a bowl, mix the butter, sugar, salt, and vanilla.

Beat in the eggs.

Add in the flour and baking powder.

Biscotti Dough

Grease a cookie sheet or bar pan, place the dough on the pan and form into a log shape. Pat the log into a shape that is roughly 1 inch thick by 5 inches wide and 12 inches long. Bake the biscotti at 350 degrees for 25 minutes.

Remove the biscotti log from the oven and let it cool for about 20 minutes, carefully remove from the pan and slice into ¾ inch wide pieces with a serrated or bread knife.

Place each of the biscotti on their sides back on the baking sheet. Bake for 10 minutes, remove and flip over, and bake for an additional 10 minutes. The biscotti may feel slightly soft but it will harden as it cools.

Cool on a rack and add a white chocolate drizzle if desired by melting ½ cup of white chocolate chips and drizzling over the tops of the biscotti. Let the drizzle dry before putting away.

Store the biscotti in an air tight container in the fridge for up to 2 weeks.
