Homemade Tortilla Soup – Nontraditional

Hello all! Today was a very relaxing day around here. The Bavarian region of Deutschland where I reside was overcast, cool, and rainy most of the day. But it didn’t bother us one bit! We had a super productive day with our schooling, chores, and cooking 🙂 

This evening we had my “nontraditional rendition” of Mexican Tortilla Soup! Here are few photos of this yummy goodness we enjoyed 🙂 You can enlarge each image by clicking on it.

SLOW COOK THE FOLLOWING TOGETHER ON HIGH FOR 4-5 HOURS:
shredded salsa chicken (slow cooked 4 boneless skinless thighs the day prior all day with 1 1/2 cup salsa + 1 cup water)
1 – 32 ounce carton of organic 99% fat free chicken stock
1 zucchini diced
1 – 28 ounce can diced tomatoes 
4 celery stalks washed and chopped
fresh cilantro
1 tbsp cumin
sea salt (just a pinch)
1 tbsp garlic powder
pepper to taste
Top it off with a sprinkle of cheese (any kind will do but we used Weight Watchers Italian blend), baked tortilla strips, and sliced avocado! YUMMMMY!

To make the baked tortilla strips, just use any variety of tortillas you enjoy, cut them up with a pizza cutter (thin strips) and broil them until a golden brown and there you go!
