Spritz Cookies
My mom and I enjoyed making spritz cookies nearly every Christmas when I was growing up. Bringing out the cookie press and creating those delicious little tree-shaped cookies was one of my favorite parts of the holidays. Mom had an old Mirro brand cookie press where you manually twist the screw to squeeze the dough out through the shaped portion. We once bought a battery-powered model so we’d only have to press a button, but it never worked quite as well. Back to the tried-and-true model we went.
I was so excited the year Mom told me I could have the cookie press. It’s all still there – the box may be faded and worn, but there are golden memories inside. Now I make delicious little Christmas trees and stars with my sons … and hope they love it as much as I did. They certainly love eating them!
Spritz Cookies
2 1/4 cups all purpose flour
3/4 cup sugar
1/2 tsp. salt
1/4 tsp. baking powder
1 cup shortening
1 egg
1 tsp. vanilla
Preheat oven to 375 degrees Fahrenheit.
Sift together flour, sugar, salt, and baking powder in a medium mixing bowl. Cut the shortening into the dry ingredients until the mixture resembles biscuit mix, only finer. Add the egg and vanilla; beat well.
Assemble your cookie press with desired shape. Fill press with dough and press onto an ungreased cookie sheet.
Bake for 8-10 minutes until edges are only slightly brown. (Cookies with brown and burn quickly so watch them closely.) Remove cookies from pan immediately and cool on cooling racks.
