Yes, real buckeyes are actually nuts, and although a lot of candy and cookies do have nuts in them, you really wouldn’t want to use crushed buckeye nuts in anything you eat. I am sure they are not very tasty.
However THESE are Peanut Butter and Chocolate Buckeyes and everyone knows peanut butter and chocolate go together like milk and cookies!
These are really a big deal here in my home state of Ohio, since the Buckeye tree is our state tree and our amazing (as of this writing) undefeated football team is named the Buckeyes. They are also quite a big deal because they are just so crazily delicious. When I was a kid, every year, my Mom and I would make these, along with 5 other kinds of sweets, to stuff into gorgeous homemade Christmas cookie boxes. We would pass the boxes out to family, friends, and neighbors.
Stores and bakeries sell them like hotcakes year-around, especially at Christmas, however none of them taste like Mom’s!
Ingredients for 5 dozen
- 6 cups powdered sugar
- 1 1/2 cups creamy peanut butter
- 1 cup butter, softened
- 1/2 teaspoon vanilla extract
- 4 cups semisweet chocolate chips
- 3 tablespoons shortening
Directions
- In a large bowl, mix together the peanut butter, butter, vanilla and powdered sugar. This can be done by hand or using a stand mixer on low. The dough will be stiff and dry.
- Roll dough into 1 inch balls and place on a waxed paper-lined cookie sheet.
- Press a toothpick into the top of each ball and chill in freezer until firm, about 30 minutes.
- Melt chocolate chips in a double boiler or carefully in the microwave.
- Using the toothpick as a handle, dip chilled peanut butter balls in melted chocolate. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until chocolate coating is set.
- Remove toothpicks and use the tip of a small spoon to smooth out the toothpick hole.
