Gluten-Free Corn Dog Muffins

Ahhhh, the corn dog. An iconic childhood food. How I loved the taste of corn dogs in the summer at the fair!! The combinations of sweet and salty. Yum. Fast forward to today…no gluten-free corndogs. 🙁 You may be able to find over-priced, grainy things that they are trying to pass as corn dogs in the freezer section of your local specialty store, but don’t bother. They aren’t that flavor from your past.

There have been all sorts of yummy-looking mini corn dog muffin recipes flying around Facebook lately, and it was torture. But then I thought, maybe I could do this. Maybe I could make them gluten free. I tried to keep my expectations low, because not only was I trying to make these gluten free, but would homemade corn dogs really taste like the real fair-purchased thing? They exceeded my expectations and more!!!! They were so fun and easy, and they tasted just like I remembered a corn dog to taste. You better just start with a double batch. I would tell you to freeze the leftovers, but there won’t be any. Enjoy a taste from your gluten-full past!!
