Peanut Butter Truffles

Coffee brewing…check…Christmas carols playing…check…frilly girly apron on…check…kitchen set for baking Christmas cookies…double check!

 

Every year at the first part of December, I send my husband and kids out on a “date with dad”, unpack my collection of red and green sprinkles, and open my home to a small handful of girl friends all eager to bake…and chat…and bake some more in preparation for the upcoming Christmas season.  It has been our annual tradition for the past four years. We have a small selection of cookie recipes that we bake each year and a stash of new ones that we try to rotate into the mix.

 

Peanut Butter Truffles…or “buckeyes” as some call them…have definitely been a fan favorite as they taste very similar to Reese’s© Peanut Butter Cups!

 

Peanut Butter Balls-The Unlikely Homeschool

 

You will need:

6 cubes of almond bark

6-8 oz. marshmallow cream (1 container)

1 c. peanut butter

2 c. Rice Krispies cereal

1 tsp. shortening

In a large bowl, combine cereal, peanut butter, and marshmallow cream.

Mix thoroughly.

Roll into 1 inch balls and freeze for approximately an hour.

Melt almond bark and shortening in a small saucepan.  Remove from heat.  Insert a toothpick into one ball and use it as a handle to dip the ball into the melted chocolate.  Transfer to wax paper.  Repeat until all the balls have been dipped.

Set in a cool place to set the chocolate.  Then stand back and watch as they quickly disappear!
